What are the options for connecting two ctrlX COREs to exchange data?
UPC UA, .........

Would it also be possible via WiFi?

I would sum it up as all TCP based protocols are possible. See also this topic for an overview.

Recommended for fast data exchange between several controls is ctrlX CORE - OPC UA Pub/Sub App.

Wifi in general is also possible but you have to care for stability and traffic.
